Cedar Planked Carp
Take your carp fillets and marinate them with equal parts of:
Basalmic Vinegar
Olive Oil
ADD to your Taste:
Italian Spices
Lemon Pepper
Onion Powder
Cayenne Pepper
Sea salt
Place all ingredients in a Zip type bag, shake well. Add fillets and marinate 4-6 hours, turning often.
Remove fillets and rub cedar planks with remaining marinate. This will keep the planks from burning and they will "steam infuse" the fillets.
Fire-up the grill to a med-high heat. Place fillets on planks meat side down and place the planks on the grill. Cook on that side 10-15 minutes. Turn fillets over and finish cooking until fillets are fork tender.
Then remove the planks/fillets from the grill, and wrap in foil and let them rest for 10-15min. Very carefully remove the fillets from the planks and throw them to the dogs. Serve the planks with sliced lemon and a beer. LOL Gotcha!

All depends on where you catch em at. If the water is muddy they are gonna taste like mud but if it's clean water they are pretty good. Weve even gone so far in the past to throw em in a water trough for a few days before we clean em and it will wash the muddy out of em. Of course it's easier to just catch Buffullo and be done with it but sometimes beggars can't be choosers.
