Not this year so far.

Last year we had deer & bear.

Then a bud of mine went on one of those closed hunts and bagged a buffalo. That was really lean meat.

dmaxjenn 02-05-2008 10:53 AM

The elk was so good , better then beef..Ive never had Bear before there all over here. never thought of them as food just a pita cause were chasing them out of our yard everynight in the summer...Buffalo would be good too I guess there treated like beef eh?

NukleusX 02-06-2008 04:17 AM

Everything I have heard leads me to believe that deer from here in socal is not very good for eating. When I was in Iowa, I enjoyed a few deer summer type sausages a co-worker gave me. I will miss the stuff, as nothing here in socal compares, and I am sure deer sausage or meat for that matter of that quality is not obtainable around these parts :( :(

dmaxjenn 02-06-2008 12:12 PM

We have Whitetails down here. Long story, short; my boss has a 3000 acre high finced ranch in South Texas. He has special permits to shoot X amount of deer per year and has an extended hunting season. Basicly we (employes and customers) shoot roughly 10-15 deer a weekend. I'm fortunant enough to go down there many times to help hunt and be a guide. I shot 6 deer this season, last season I shot 9, and the one before that I shot 13ish. I don't keep them all. I usually get a couple early in the season to make sausage, then the others I shoot go to the office and others go to customers that didn't shoot anything. This last weekend was our 'clean-up' weekend where we shoot out the amout of permits he has left. Our target number was 15, but we only got 12. O'well, the rest will live till next season in October. He has some of the largest deer in S. Texas, I'll post some pictures when I get home and use my compter there.

Tamallies are a Mexican dish that have meat rolled up with a Mexican 'masa' wrapped in corn husk and steamed in a huge pot. Usually you make several dozen at a time because of all the work involved, eat a 1/2 dozen with some salsa and freeze the rest till later.

Deer rolls?? Ask Skipp, Aaron or Tracy about those:5: I take thin slices of backstrap, marinate them in my special sauce, then wrap them with a jalapeno and bacon. Char them on the gill and eat.

DB Admin 02-06-2008 04:14 PM

Ive had some very good Wild foods , Stuff mom made ,,, Jenny has got me to the point to where i quit hunting for food , She cooked up some squarels when we were dating and they were nasty , then shes tried deer a few times , I usually get up from the table and grab the phone and speed dail dominos ,

My Neighbor and his wife are great at cooking wild food , Ive had Ground Hog at his house and it was awesome !! He will never tell you what your eating till its gone ,

Jenny has tried a few different ways all sucked , I gave up on it , Ill go to the meet market and get beef ,

A guy at work thinks he can make wild game its horrid , Very funny is he always talks about mixxing in 1lb of beef with 1 lb of elk and stuff like that , To me the elk is just filler and he ruined the beef , Its like $150 to have a deer processed $50 for a tag for $200 i can have a bunch of NY Strips :)

DM

dmaxjenn 02-06-2008 04:26 PM

ok first of all ,,,are you starving.. why are you eating squirrels in the first place, ground hogs... come on,, save those for the eagles..

It is pretty pricey to buy steak too, we paid 1100 for side of beef....regardless, deer was about 120.00 to cut and wrap. the ticket was a draw, so no cost there either..
we coulda done it ourselves if we had the right place to hang it and cut it up.. did it before was just as good and dam easy,,plus got way more pieces for jerky, and every dog in the neighbour hood got a bone..:yum:

:humm:that cost hardly nothing but paper and tape and time.

I think if your going to mix any thing with deer or wild game would be pork to the burger, cause its so lean anyhow...

So your the cook in the house then? lol

DB Admin 02-06-2008 04:33 PM

When it come the the Grill , Steaks BBQ ect , Yes its all me , now if you want lasagna , Meatloaf , Pot Roast and stuff like that then she does great , I make the chili , usually do it on the wood burner

I grew up on Squirrels and rabbits , On the weekends i would go out and get one and skin it and i would have it for supper while everyone else had what mom was going to make anyway , Now when i got Frog legs it was the main course Fresh Frog legs jumping around in the skillet Now thats Good Game :)

dmaxjenn 02-06-2008 04:37 PM

what lol ...thats funny.. ok small thing you can eat here, maybe grose.. has about as much meat as a cornish hen.. you can kill them with a rock.. step on its wings and pull off the feathers by its feet. kids do that, ive never done it..
then rabbits ive had,, really good cooked like in a stew i think was how it was served..forg legs???? tooth picks??? why.......wheres the beef!!! lol

DB Admin 02-06-2008 04:51 PM

dmaxjenn 02-06-2008 04:55 PM

no.....husbands that come home early do........

ive had coon, gator, shark, turtle, snake, frog, squirrel, rabbit, deer.....

why dont you process your own deer????? me and mom used to skin hogs and deer quick, a hog from the shot to the freezer was 1 hour 20 minutes......skin and gut it and quarter it with a chainsaw......cut the head off, split the ribs on each side of the back bone with the chainsaw, cut the front legs off, cut the ribs out, cut the back legs free of the back bone and let the spine fall.....wrap in freezer paper, tape, label and throw in the freezer....

Red Beans and Rice
OK, next time cook up the sausage whole and cook one cup of rice (2 cups for more than 4 people). WHile you are doing that, sautee about a half an onion and then dump in 2 cans of Red Beans (I use 2 normal sized cans, but you can use the bigger can if you need to feed more than 4). Season the Red Beans with Caujin seasoning (if you don't have than use chillie powder, cayanne pepper, black peper, garlic powder). Once the saugage is done, slice it up to small bits and dump it into the beans. Once beans are soft and everything has had time to mix, pour in the rice. Put it in a bowl and chow down......may use some bread as a spoon if you like. :5:

sunsetsky 02-07-2008 09:01 AM

That sounds really good!

dmaxjenn 02-07-2008 01:28 PM

MMM sound good, next time I will ........theres probably about 8 more packs of sausage there.
Tonight its Stew going. Beef... you know i have awhole bunch of bones still, do they go to the dog or do they go in a soup? :humm: I suppose i could boil some bones to make a broth, cause i m out right now, and add the stew meat later.. better get at it...any suggestions throw them my way.. I love new ideas..:yum:

Rttoys 02-07-2008 02:48 PM

Hold on there with that stew. This has got to be the best soup I've ever made and it will feed an army. Be sure to make rice and have bread handy.
http://www.thepittsburghchannel.com/...25/detail.html

and the Oven Beef Stew by MR. Food is also great:
http://www.kwqc.net/1999mrfd.htm#TV278

OK now I'm hungry again.

As for the bones, if you want every ounce of meat, boil them and use it for Tamalies or the soup, if not, they make good dog food.:choochoo:

dmaxjenn 02-08-2008 12:23 PM

Well I missed your suggestions but i put them in my favorites for later.. great looking recipes:U:.......

:humm: Not sure what im going to fix tonight, Friday night....something thats good after a few :c:

---AutoMerged DoublePost---

I dont even know what kind of Bones they where from :humm:......maybe a leg bone from a deer...
full of that marrow stuff.
Stew turned out OK, was greasy at first from the bones,
so I had to take that all out.. yucky grease..
I have some left over,, the tomates sound good to add..:U:

fire up a charcoal grill, open up a brain grenade. then put some sliced potatoes, onions, and mushrooms, top with 3/4 stick of butter that is divided up into four slices(evenly spaced) on about 2 feet of aluminum foil. open up another brain grenade. then season with wtf you want. fold the long sides together and roll down, then put a second layer of aluminum foil around it. open up another grenade. then take the venison backstrap(whole) that has been marinating in your fridge for three to four days with your favorite seasonings, a couple shakes worcstersihire sauce, and 1/8 to 1/4 cup of pickle juice (claussen)then another grenade. let the meat sit at room temp on a counter for the hour while the taters cook, turning around every 15 minutes making sure not to flip them over or the butter will run out. then make sure the dog or cat didn't get the goldang meat, take a leak and get another grenade. then move the taters to the back of the grill and rake the coals level. then open up a grenade. then slam the whole thing on cooking it till you think its done (8 minutes a side is nice and medium rare ohh the barbarianism)then slam the rest of your grenade. then eat if you still are hungry....

dmaxjenn 02-08-2008 04:07 PM

whats a brain grenade?

tyjax 02-10-2008 03:46 PM

You guys gotta try Oryx! Best game meat I've eaten yet. I love deer and elk also, but there's just something about that Oryx.
