Just buy a cab from a salvage yard with a Bill of Sale showing it's VIN.
Most states recognize that in a legitimate re-build and issue an "assembled" or "rebuilt" title when you are done.

Call your "BMV" and ask.
Tell them your situation, that you have a cab that's rusty, or damaged beyound repair and you want to swap the cabs out.
There should be a procedure for it.
