Default Turbo and fuel controller questions

Need some help here or maybe just validation. I have a 95 12v with a pulled fuel plate, 90 over injectors, and a 4 inch mbrp. It's currently in the shop getting the transmission resealed, installing a Suncoast valve body, billet input, and a triple disc converter. I'm slowly amassing parts for my major upgrade weekend. So far I have 4k governer springs, and half cut delivery valves and gauges sitting at home. (The gauges are going in as soon as I get the truck back) Next purchase is head studs. My question is what kind of turbo (billet?, Inducer/exducer size?, single or twin scroll?) would go well with this and still give me a usable daily/towing rig? Also between AFC live and the attitude adjuster, which is a better package, and is it worth it in the first place? Do I need to reinstall my fuel plate or buy a cut one for the tuner? The attitude adjuster seems simpler. But I like the idea of full tunability with the afc live. Is it truly fully tunable though? Not too concerned about huge power numbers looking for a quick truck that spools fast. I know it's a lot of questions for one post just wanna make sure I'm going the right route and figure I'd ask for some advice.advice
