Default Which tire size to get?

Currently I have near new dick cepek radial fc-2's (285/75/16) and it sucks to have to part with them being that there brand new but with my 4.10's i'm looking to get a new set of rims and a bigger set of tires to even my highway speeds out even just a little bit. Which would be the best to upgrade to 315's, 325's or 37's? To compensate for a larger tire size also I am considering leveling my truck which would require a 3" leveling kit, what is really required to run something like 325's or 37's? Also what are the downsides to larger tires in means of towing and regular driving? Thanks for any info
