It really depends on ambient temperature, what kind of driving you are doing, where the sending unit is mounted, ect.
I have my sending unit mounted in the pan and most highway driving with an ambient temp between 30 and 60 degrees, the gauge won't move much past 125. Once I start loading it and pulling hills and whatnot it will get a little closer to 180.
