Single or dual?

Depends on what your doing

im doing stage 2 sticks and d66 turbo

Sticks are what you find on the ground. I when you look at a clutch it doesn't so much matter how much power you pushing as to how you will be driving it.

its going to be a daily driver and i haul 8k once or twice a month

Should be fine with a single.
