I don't know if this will be any help to you but my '95 used to do this and it turned out to be a bad ICP sensor.

almost sounds like to me its a bad thermostat, so its shutting the truck down to save it so it won't over heat

well my best guess, they fixed it. it has been 2 and a half years...
