i use

2 pounds LEAN hamburger
1 pound deer burger
1 pound lean sausage
4 cans of beans
2 cans tomato paste
2 can drained mixed "mexican" veggies (different peppers, tomatos, other stuff) get it at Save-A-Lot.
2 cans peeled tomatos
3 cans chopped tomatos
4 BIG cans of tomato juice
mild barbecue sauce, not very much
chopped onions, garlic, and chives if i got them
few drops of afterdeath
pepper, chilli powder, garlic powder, italian seasoning, oregano, few other seasonings

cook meat with some of the onions, and garlic seperately draining off ALL of the grease.

sautee' the rest of the onions, garlic and drained "mexican" veggies with a little tomato paste, use a little grease from the hamburger when doing all of this but not very much, just enough to keep veggies from burning.

throw everything else into a giant pot and let it start to boil then add the stuff you sautee'd after it begins to boil, may have to add some water or another can of tomato juice to get your liquid height up, i cook mine on low for a long time, usually an hour or more, that shit right there will make a puppy pull a freight train....

i get a mixing bowl and a serving spoon, that is the only thing i will eat with, pour the chilli in about 1/2 way, add ALOT of cheese and sour cream, then fill the rest of the way with chilli, sounds weird but i like it that way, this is really chunky stuff by the way....damn i think im gonna have to make some chilli.......

***the seasonings can be used where ever in any of the processes, i use alot of them***

That Sounds Like a Nice Gitup Logan And its getting Chili Season :)

LOGANSTANFORTH 09-16-2007 12:17 PM

sometimes ill add in a bag or two of mixed cheese into the chilli just to make it that much more thicker.

06 DIESEL 09-16-2007 08:29 PM

My chilli

3 lbs lean ground beef
2 cans mild chilli beans
1 family size tomato sauce
tablespoon Brown sugar
Elbow macaroni (optional)
Chilli powder packet
1-2 cups water (depends on how soupy you want it)

Brown beef in skillet
Mix in pot over medium heat: 1/2 sauce, brown sugar, 1/2 chilli powder, chilli beans, water
After meat is ready add rest of sauce and chilli powder and heat
Mix meat with items in pot and add macaroni (optional)
Let simmer over medium heat until warm throughout or macaroni is cooked

Better reheated, make ahead of time and referigerate. This is a very thick chilli, I add shreaded cheese (mild chedar) to my bowls and eat with all purpose crackers whold not crumbled.

I had a friend that lived with me through college. He hated chilli before he had mine. The firsts time I made it he said he didn't want any but I made him have a bowl, nest thing I know he is asking for me to make it so he can have some. Took my recipe home to his house after he graduated and now makes it my way for his parents (still lives at home on the farm) and tehy have also decided that it is better thick than thin.

LOGANSTANFORTH 09-16-2007 09:38 PM

I like my chilli like I like my women, thick and chunky.....

2001shrtbedcummins 09-16-2007 10:43 PM

3lbs homeraised ground beef
4-5 cans of dark/light kidney beans
2-3 medium sized sweet onions
1 small hot onion
3-4 bell peppers
3-4 quart jars of homemade canned tomotoes
buttload of chili powder
garlic powder
onion powder

like everybody else said brown the meat...drain off grease sautee the onions and peppers...pour the meat in medium sized pot...add the onions and peppers...add first two jars of beans...add 1 and 1/2 jars of tomatoes...curse because the pot is too small...put in large pot...add rest of tomatoes...add rest of beans...season to taste.
Mine is always a lot meatier and chunkier than most...cold day...oh man...makes me want some...to bad it was 93 today...lol

LOGANSTANFORTH 09-17-2007 01:06 AM

Did you ever notice Chili tastes better the second day?

2001shrtbedcummins 09-17-2007 08:37 PM

oh yea definitely.

CHenry 09-17-2007 09:12 PM

4 lbs ground deer
1 or 2 large onions
1-2 bell peppers
1 large can tomato juice
5 habinaro peppers (chopped fine)
2-4 tablespoons chilli powder
2 cans red kidney beans
6-12 beers

Brown meat, (drink a beer) put in chopped onion and peppers, simmer (drink a beer) , add tomato juice, (drink a beer) add beans and chilli powder and simmer till yer out of beer, go get more beer and serve. I add cheese and sour cream to the chilli and have a few corn chips to dipp too.
The key is the deer meat - don't overseason and cover up the taste of yer meat.

This is an awesome thread! I love chili and I am going to be trying all these recipies. My wife makes the chili usually, and its damn good, but if it involves the BBQ, thats where I tell you to get outta my way :)

2 large chicken breasts, thawed
2-3 cans different beans, drained (we use pinto and black beans)
1-2 small cans of diced green chilis
1 can tomato paste
salt and pepper to taste
1-2 teasp. cayenne pepper
1-2 teasp. chili powder
1-2 teasp. crushed red chilis (the kind that comes with your pizza from dominos)
1-2 teasp sage
1-2 teasp cumin
1-2 cups water
1/2 a jar of sliced jalapenos
6-7 dashes of the hotest hot sauce you can find :)
Enjoy.
