I am sure that you are going to use the walls behind the showers to enter rather than busting up the tile?

It is a lot cheaper and easier to TBT a wall rather than replacing all the tile.

Is there a way that you can just cut out a section then when you finish fixing it put in a access panel in the area you cut out? I have never done this but its an idea.

Are they physically broke?

You can reseal them and put new valves on by taking off the handle/covers and there is the valve. After turning off the water, you unscrew the valve and reseal/reseat or replace the whole valve. The actual casting that holds it all doesn't need to be replaced unless it is physically broken.
