I have a 2007 Ram 3500 4x4 (the 5.9L) with a Dynamax (?) exhaust system, lifted 3" w/35s, and the engine is bone stock. I want to do an intake and chip it (looking for better gas mileage more than anything) and I know there are TONS of options so...

...what are some good routes to go for intake + chip?

IMO, there’s no beating an s&b intake system and either as far as a tuner goes edge is pretty good or efi live. Diablo sport makes a decent tuner as well just depends on your budget and what you really want in a tuner.

For fuel mileage, keep your stock intake and filter. EFI live or smarty/MM3 are the best tuning format, just make sure you use a reputable tuner to write your tunes. Your right foot is the biggest factor when it comes to fuel mileage.

Gauges are a must before you really start modding. Ya gotta know how your engine reacts to mods, plus, gauges help keep you in check.
