What engine temperature are you guys running?
 
When my engine is fully heated up it is at 179. now in this cold weather i havent seen higher than 167 except for pulling on the express way.

What are you guys running when you are fully warmed up?

Possibly a sticking thermostat. I'd change it out and see if that helps

Well when took my truck on the dunes the temperature rose all the way to 200

A thermostat, is a cheap and easy replacement. That's where I would start. Here is something to consider:

I've changed mine multiple times, and it's always cold. Unless I'm towing heavy through town at low speeds in the summer and it's 90+ out, it never goes over 190. This is nice, except that in the winter I don't have anything but cold air out of the heater until I've been on the highway for a half hour or more. If it's less than 40 out, it'll never go over 165. I hate it. I've talked to both Dodge and Cummins, and they both assured me that it's perfectly normal and not to put a hotter thermostat in. Pisses me off.

Winter fronts do wonders. A piece of cardboard in front of the rad and behind the cac does wonders during the winter and all it costs is pizza one night to last most the winter

Im runnin a lil colder due to the temps, but summer around 190.

Tried that once, buried the temp gauge pulling a load through town even though it was almost freezing out. Tried covering only part of the radiator, then a different part, wasn't able to get a combination that wouldn't overheat but would actually make the heater work like it should. Trouble is, it isn't unusual in the winter here for it to be single digits at night then 40's or even 50's during the day. Gave up.
