how high will egts be? and can this hurt anything?

You might get people that say running no plate will hurt the pump but it won't. Been running no plate for over 3yrs with no problem. You can get high egts with no plate. You just have to control your foot or get more air. With no plate and a bad wastegate I hit over 1400 when converter locked up.
