Don't believe the 2000 models have any sensors to trip you up, so you should be good to go.

I removed mine with no issues, until I went down and had to get a smog check and the guy failed me on the visual inspection because there was no Cat, had to put one back on to get registered... now I have a 5" inlet/outlet hollowed out piece of pipe that says Catalytic Converter on it

usually how to know if its safe to remove or not is if theres not a sensor on the outlet of it then your good , the ones with the outlet sensors take the reading and adjust fuel to air to get the fumes in spec and if you remove the converter then it sees bad things and jacks everything up
