08 6.4 temp gauge shows hot but the truck isnt overheating?

Default 08 6.4 temp gauge shows hot but the truck isnt overheating?

new guy here. I have been lurking and finally decided to join. I hope someone can help me with this. 2008 f250 king ranch crew cab 4x4. 206k miles. the truck has a new radiator(3rd one) sinister egr delete, dpf delete, new thermostats, new water pump, flushed coolant, new clutch fan etc... I had the truck in the shop for an oil leak and it turns out it was the return off of the ccv was cracked. when I picked it up I noticed that the cooling fan was on as soon as I started it and it showed hot on the gauge. the truck will run cool all day long at idle but as soon as you try to drive it the temp gauge starts to climb and will go all the way to the red on the gauge but the truck is actually not running hot. I can take a pyrometer and nothing on the engine is over 180 degrees. the radiator is cool to the touch, the coolant in the degas isn't hot. on the scanner I see the the temp shows 230 or so but the oil temp is 177. could it be a bad temp sender? sorry for the long post but I am stumped. thanks in advance.

also I failed to mention that the fan seems is on as soon as you start the truck even when its totally cooled off. it may just be a coincidence but all of this started when I changed the tune in my mini max.
