no problem. I love bar-B-Q ing

The quick marinades I do is worchester sauce ,whiskey or rum, a small amount of vinegar, liquid smoke, and montreal steak seasoning.
I put them all together in a big freezer zip lock and suck all of the air out so the marinade touches the meat in all places.

then put it in the frig over night.

I take my steaks and cook them on the grill in foil packs most of the time. Put 2 steaks to a pack then I cover them with seasoning salt, chopped onions, a little Cheyenne pepper, a little Tabasco sauce, and then cover it in a good helping of A1. Seal the pack up and throw it on the grill for about 20 min on each side. Comes out pretty good to me.

When I don't use the foil packs I mix a bottle of A1, some tabasco sauce, cheyenne pepper, and some steak rub in a bowl and brushes it on as the steaks cook.

I tend to favor the foil packs and low heat/longer cooking times as it just tastes better to me.

For wild meat I use the easiest marinade there is. Just put em in a ziplock with enough italian dressing to cover em for at least a few hours. If I cook em on the stove I just pour dressing and all int he skillet and on the grill I put the foil down and poor the whole thing on. The vinegar tenderizes any meat and it covers any gamey taste they might have. Other than that anything is better under BBQ Sauce.

Yeah I agree had moose and thought it was better than beef by far. I like using a Carribean Jerk Marinade on most meats, has just enough spice to tickle the tongue but isnt over whelming.

Dude If I lived near you or New hampshire, I would totally swing my truck into one of those moose to make road kill that I can take home. seriously. one adult moose can provide enough meat for a 4-5 person family for 2 years.

and yes the caribean jerk is one of my favs as well
