I'd say you're going with the right gear choice, and like pap said, a run down the sled track isn't long enough to worry about egts, once your clutch is up don't let the pedal up you aren't moving anymore!

I'd reccomend letting some air out of your front tires, maybe run 50% of normal pressures(i run my BFGs at 20psi when pulling) and maxing out the air pressure in your rear tires. Gives you a wider foot print up front and the rear tires aired up help with the load of the sled. Also, use a 4 inch clevis and a hitch pin thats heavy enough to handle at least 30k lbs or so as you dont want that to break while at max boost, measure your hitch height, I think my local rules are 29 inches from the ground to the clevis. Mine is set at 28.75.

If you start hopping bad, let off the go pedal and push clutch in at same time, avoid jamming on the brakes or the sled may hit your truck. Also, when you launch, slowly let the clutch out as you build boost but be fully off of it by the 25-50 ft mark or you could slip it or melt it together. Seen that happen before. Also, not sure what clutch you are using, but I hope its not a stocker or you're probably not going very far

What gears and tire size? And the sled WILL hit you if you use the brakes
