Have you noticed the truck being able to down shift when accelerating in lower gears?
This could be a lose throttle cable, as the original throttle cables had a service life of 30,000 miles, or it could also be that your tv cable needs to be adjusted or replaced.
My father has a 97 that had the same issues and we replaced his throttle cable, and it fixed his problem.

Its an easy way to test if you have a bad cable. One person goes in the cab and goes WOT on the pedal and then someone else goes onto the injection pump and sees if the throttle will open further by hand, again this is how we had fixed my dad's 12 valve, if not it could be your tv cable a little searching on the web can help you find you answers about the tv cables adjustment.
Also since you just bought the truck has the KDP been tabbed?

here is the link to what a KDP will do if unaltered
